Spanish Rice with Beef

Just like the Shrimp Creole, this recipe cheats on what it is like crazy. I don’t care; it tastes good.

3/4 lb ground beef (do yourself a favor and get the 7% ground sirloin)
1 c water
1 can tomatoes with peppers and onions
1/2 tsp EACH oregano, chili powder, salt
1/4 tsp garlic powder
1/8 tsp pepper
1 1/2 cups Minute Rice or boil-in-bag brown rice

1. Brown meat and break into pieces, about five minutes. If you’re not using the 7% ground sirloin, drain the fat and return beef to skillet.
2. Add water (for Minute Rice users only; boil-in-bag rice users, cook rice separately)
3. Add everything else but the rice and bring to a boil.
4. Stir in rice.
5. Cover and remove from heat, let stand five minutes.
Makes four servings.
